As a son of farmers, I have strived every day for 25 years as a leader to promote the production skills of our local farmers and always with this desire for a short circuit. More than 40 producers in my department, market gardeners, breeders, fishermen, winegrowers, truffle growers, are highlighted in my La Table maps. Without them, our profession would not have the same values and, most certainly, my cooking would not have the same story.
