Recently, my way of eating, consuming and choosing my products has evolved a lot, because we are confronted full force with the negative effects of our system, such as over-consumption, global warming and the depletion of our natural resources.
La Fine Bouche is more than a restaurant, it’s a place for exchange and sharing. For us, working in the right direction means consuming in season produce; recycling waste; favouring local producers and sustainable channels; working with green energy; controlling stocks and fighting against waste; excluding products deriving from overfishing and intensive farming; and using ecological cleaning products.
Good physical and mental health depends on what we eat, which is why it is essential to take care of our customers. The change of consciousness must pass through us because we are the main actors and – I think – the best ambassadors for a responsible and sustainable gastronomy.
