Through our profession, we are committed to sharing and transmiting our beliefs, our heritage, our history.

Eating is not  inconsequential. It is the very instinct of preservation, of survival which, throughout time, has shaped the tastes of our families despite famines and food shortages over the centuries. We have written the history of our gastronomy.

In the clamour of globalization, we must safeguard the table, that of our childhood, of our parents and grandparents.

We must not forget who we are and where we want to go.

We are the custodians of an immense treasure, which we must all share to defend our heritage.

We must help producers who preserve the biodiversity of our supplies, and forcefully fight against homogenized cuisine.

Let’s save the planet from junk food.
